CHICKEN SATAY with SPICY DIPPING SAUCE
*Soak wooden skewers in water while you are preparing this recipe.
½ # or about 1 large chicken breast
2 tbsp soy sauce
2 tbsp oil
1 ½ tsp Asian chili sauce
2 tbsp brown sugar
2 tbsp cilantro leaves, minced
1 garlic clove, minced
1 tbsp onion, minced.
Day 1:
1. Combine the soy sauce, oil, chili sauce, brown sugar, cilantro, garlic, and onion in a large bowl. Transfer to a plastic bag.
2. Slice the meat against the grain into ¼ inch thick strips.
3. Put chicken slices in the marinade and refrigerate 1-2 hours or overnight.
4. Adjust the oven rack 4 inches from the broiling element and set oven to broil. Line the bottom and the top of the broiler pan with foil.
5. Thread the skewers through each piece of meat several times.
6. Place the skewers on the top of the broiler pan, covering the ends of the skewers with foil.
7. Broil about 7 minutes, flipping over the skewers halfway through the cooking time. Additional cooking may be necessary.
8. Serve immediately with peanut sauce.
Spicy Peanut Dipping Sauce
¼ cup creamy peanut butter
2 tbsp hot water
1 ½ tsp soy sauce.
1 tbsp lime juice
1 ½ tsp Asian chili sauce
1 ½ tsp brown sugar
1 small garlic clove, minced
1 tbsp onion, minced.
1. Whisk all ingredients except peanut butter and hot water in small bowl.
2. Whisk the peanut butter and hot water together in a medium bowl.
3. Add to the other dipping sauce ingredients. Serve with Satay.
