HOT MILK SPONGE CAKE with Broiled Coconut Topping

Cake:
1 cup all-purpose flour
1 teaspoon baking powder
2 eggs
1 cup sugar
½ cup milk
2 tablespoons margarine
Coconut topping:
¼ cup butter
1 cup brown sugar
2 tablespoons half and half or milk
1 cup shredded or flaked coconut
Directions:
1. Preheat oven to 350 degrees.
2. Combine flour and baking powder in a bowl. Set aside.
3. In the Kitchen aide bowl, beat eggs with the paddle attachment on high speed about 4 minutes or till thick.
4. Gradually add sugar, beat at medium speed for 4 to 5 minutes or till light and fluffy.
5. Add flour mixture; beat at low to medium speed just till combined.
6. In a saucepan heat and stir milk and margarine till margarine melts; add to batter, beating till combined. Pour into greased 9x9x2 baking pan.
7. Bake in a 350 degree oven for 20-25 minutes or till a toothpick comes out clean.
8. Meanwhile, cream butter and brown sugar in mixer. Add 2 tablespoons of ½ & ½ or milk and coconut; mix well.
9. When cake comes out of oven, spread coconut topping on cake.
